Kaju Pokaras
Ingredients 1 cup besan flour
one half cup rice flour, 1 table spoon oil,about 3/4 cup of water, half cup of raw broken cashews (kaju), 1/8 teaspoon hing, 1and1/2 tsp salt, 3 or 4 green chillies chopped fine, 1" piece of ginger chopped fine and crushed, few curry leaves cut up.
Method. In a large bowl mix both the flour. Make a well in the center and add the salt,hing and oil and mix thoroughly. Then mix the chillies, ginger and curry leaves. Add the cashews and mix with fingers. When well blended add water slowly and knead into a thick hard dough. Make small flat balls about one inch and deep fry in enough oil in a wok (kadai) till golden brown. Heat oil on high then reduce heat while frying. Eat with pudina chutney.

Poha Batata
Ingredients One cup poha, one small onion chopped into bits, 1 clove of garlic peeled, 3or4 curry leaves, pinch of hing, 1/8 tsp of black mustard seeds,1/4 tsp jeera (cumin seeds) 1/4 to 1/2 tsp white urad dal, 2 or 3 green chillies. 1/2 tsp turmeric, 1 large potato or 2 medium cut into small bits, 2 tablespoon of oil.1or2 tble spoon of dry or fresh grated coconut, roasted cashews, chopped coriander leaves for garnishing.
Method Put poha in a colander or a large strainer rinse under running water, keep aside. Heat the oil a saucepan, add hing, mustard seeds, jeera, till they crackle, then add urad dal fry till lightly brown then add garlic, onions, curry leaves and chopped potato bits, salt to taste and turmeric podwer. Stir and cover with lid. reduce heat and cook potatoes till soft,about 10 minutes, then add the washed poha and stir gently, garnish with coconut, fresh coriander, cashew bits, and sprinkle some lemon juice before serving. Enjoy!
