INGREDIENTS -
Bread 6 slices
Milk 2 cups
Fresh Cream 1/4 cup
Milk Solids (khoya) 100 gms.
Sugar 4 tbsps.
Green Cardamom Powder 1 tsp.
Saffron 2 strands
Cashewnuts (chopped) 1 handful
Kewra And Rose Essence few drops each
Pure Ghee for frying
Sunflower Seeds (chironji) 1 tbsp.
GARNISH -
Varq 3
Rose Petals a few
METHOD -
1) Remove crust from bread slices and cut one slice into two. Fry the bread pieces in ghee till golden brown. Arrange on a plate.
2) Heat milk, adding the sugar and saffron and a few drops of essence. Pour over the bread slices.
3) Allow the bread to soak up the milk, then arrange the bread pieces on a decorative plate.
4) Heat two teaspoons of ghee and lightly fry the crumbled mawa, cardamom powder and two teaspoons of sugar.
5) Spread the mawa layer over the soaked bread pieces.
6) Add essence to the cream.
7) Cover the mawa with a cream layer and decorate with varq, chopped cashewnuts, chironji and rose petals.
8) Serve cold.

Bibinca
INGREDIENTS -
Castor Sugar 1 kg.
Coconut Milk 3 cups
Egg Yolks 20
Refined Flour 10 gms.
Nutmeg (grated) 1/2 tsp.
Cardamom Powder 2 tsps.
Ghee 1 cup
METHOD -
1) Preheat the oven.
2) Add the castor sugar to the coconut milk and stir till dissolved.
3) Beat egg yolks till creamy and add to the coconut milk and mix thoroughly.
4) Add the flour to this mixture, stirring continuously so that no lumps remain. Add the grated nutmeg and cardamom powder and mix.
5) Take a deep pan about 6`` in diameter and heat a tablespoon of ghee in it. When it is hot pour a cup of batter and bake till brown.
6) Add another tablespoon of ghee and over it pour another cup of batter and bake till brown.
7) Continue in this manner till all the batter is used up. Decorate the last layer with a few slivers of toasted almonds and bake. When done turn it upside down and cool.
8) To serve, cut it into thin slices.

Badami Besan Ke Ladoo
INGREDIENTS -
Gram Flour (besan) 4 cups
Ghee 2 cups
Green Cardamom Powder 1/2 tsp
Almonds 20-25
Sugar (powdered) 2 cups
METHOD -
1.) Heat ghee in a kadai and add green cardamom powder.
2.) Add gram flour and roast on low heat for approximately fifteen minutes.
3.) Crush the almonds.
4.) Transfer the roasted gram flour to a bowl and add crushed almonds and mix.
5.) Allow the mixture to cool slightly before adding the powdered sugar.
6.) Add the sugar and mix. Roll into laddoos.
7.) Cool and store.

Hot & Sour Soya Vegetables
Method -
1. Put soya nuggets (2 cups) in boiling water for 15 min. (Do not cook completely just partly cooked)
2. Marinate the nuggets. (maida – 2 tbsp cornstarch – 1 tbsp pepper pwd., salt less than required], dark soya sauce – 2 tsp, and water to make a coating paste)
3. In a small pan heat oil & roast cashews (1 cup) till golden brown & put aside
4. Deep fry the marinated soya nuggets till rich golden brown color & place aside
5. In a slightly deep pan take a little oil, & sauté finely chopped garlic ( 2 tsp)
6. When done, add green chilli paste ( ½ tsp) dark soya sauce (2 tsp) & green chilli sauce (2 tsp). Add salt to tast & pepper pwd. (optional Add 1 tsp ajinomotto)
7. Add water (about 1 cup) and bring to boil
8. Add diced onions & fried nuggets. Cook till nuggets swell to full size.
9. To cornstarch (1 tbsp) add water( ½ cup) and dissolve. Add this mix to gravy while stirring constantly
10. Add julliens of capiscums & spring onion greens, & fried cashews. Cook till done
11. Add ½ a lime’s juice & mix.
