Spring Onion And Potato Soup
Ingredients
1. 1 seasoning cube(veg.)
2. 2 to 3 peeled potatoes, cut 25mm. (1")
3. 1 large carrot, cut in slices
4. 1 teaspoon cornflour
5. 3 small spring onions, finally chopped into rings
6. 2 dried Chinese mushrooms, soaked, drained and finely chopped. (optional)
7. 2 pinches chilli powder
8. 1 teaspoon sugar
9. 1 1/2 teaspoons soya sauce
10. 2 teaspoons lemon juice
11. 2 red or green chillies, slightly crushed
12. 10 basil leaves
13. 2 pinches pepper
salt to taste
For the garnish
14. 1 teaspoon chopped coriander
Method
1. Boil 4 cups of water with the seasoning cube, potatoes and carrot and then simmer for 5 to 7 minutes until the vegetables are soft.
2. Mix the cornflour in a little water and add to the soup. Simmer for a few minutes.
3. Add the spring onions, Chinese mushrooms, chilli powder, sugar, soya sauce, lemon juice, chillies, basil leaves, pepper and salt and simmer for a few minutes.
4. Serve hot and garnished with coriander
