Chili Prawns


Preparation time 30 minutes

cooking time time15 minutes

Ingredients

1/2 kg tiger prawns

5 green chillies

1 tsp. Soy sauce

Curry leaves (optional)

oil for deep frying

For the marinade

2 TBS flour, 1 TBS corn flour, 2 TBS lime juice, 2 TBS ginger-garlic puree, 1 tsp. Chilli powder or green chilli sauce , 1 tsp. Soy sauce, 1 egg, 1 TSP garam masala, salt to taste. Mix all the above well.

Cooking method

Marinate prawns in the marinade for 2 hours. heat the oil well and deep fry the prawns coating them well with the marinade till they are crisp.

Take a cooking pan heat the oil an fry the slit chillies and curry leaves for 4minutes add the fried prawns soy sauce and mix well and remove from heat. Serve with limejuice sprinkled on it can be served as an appetiser or a side dish.

Tandoori Lamb


Ingredients

3/4 kb lamb chops

1 tbsp garlic paste

1 tbsp ginger paste

3-4 tbsp yogurt

1 tsp kasuri methi (available in Indian stores under that name)

3 tbsp lime juice

1 tsp garam masala

1 tsp chili powder

1 tbsp coriander powder

1 tsp cumin powder

2 tbsp oil

salt to taste

Method

Slit the lamb with a knife and rub salt and lime juice to it. Take a mixing bowl and add all the ingredients and mix them well to form a marinade. Marinate the lamb overnight preferably in a refrigerator or 6 for hours (lamb needs to be marinated more time to make it tender) Place the lamb under a hot grill or barbecue and grill till the lamb is cooked and tender slightly smoky brushing the left over marinade from time to time.

Mango Delight


Mango pulp...........1can

Un flavoured Jello...1pac(powder)

Philadelphia cheese...8oz cup

Sour cream............2 cups

Sugar..................1cup

Pie filling crests......3

METHOD

In 3 cups boiling water add jello and cool then blend it along with cheese , sour cream and sugar in a blender. then add mango pulp and blend once and pour into the pie crests.freeze it for 4-5hrs and now keep refrigerated.( not in freezer) Delicious mango Delight is ready

Vegetable Noodles


Ingredients

1 packet fresh noodles

1 carrot chopped into small strips

1/4 cup finely chopped beans

Handful of green peas

3-4 florets broccoli

1/4 cup shredded cabbage

2 eggs

1/4 tsp chilli paste

1/2 tbsp garlic puree

1/4 tbsp ginger puree

2 tbsp soysauce

salt to taste

pepper to taste

1 tbsp oil

Method

Heat the oil in a wok till it is very hot and add the ginger garlic and chilli paste and break the eggs and pour directly into the wok scramble the eggs and mix, let the egg cook completely Now add the chicken, vegetables, salt and soy sauce and cook on high for 3 minutes, turn the heat to medium and cook till the vegetables are slightly tender and slightly crispy and the chicken is cooked. Now add the noodles and mix with a fork separating the noodles , mix well sprinkle pepper and take off heat.

Peshawari Roast Lamb


Ingredients

1 kg Lamb (preferably leg)

1/4 kg onion sliced

250 ml yogurt

200gms ghee or oil

1 tsp pepper

1 tsp chili powder

1 tsp garam masala

2 tsp salt

500gms green peas

1 tbsp ginger paste

1 tbsp garlic paste

Method

Clean and remove the skin from the leg of lamb. Slit it with a knife randomly, Mix yogurt, chili powder, pepper, garam masala salt and turmeric. Rub this mixture to the lamb. Fry the onions till brown and add ginger garlic paste and fry till 3 minutes. Transfer the mixture into a big oven proof dish and place the leg of lamb and peas in it. Heat the oven to medium and cook in the oven for 25-30 minutes or till the lamb is cooked and tender.

Fish Putto


Ingredients

1/2 kg fish

1/2 cup water

1 tbsp vinegar

2 large onions

1 tsp ginger paste

4 green chillies

1-11/2 cup grated coconut

1/2 tsp mustard

1/2 tsp turmeric

2 tbsp oil

few curry leaves

bunch of coriander leaves

1 tsp salt

Method

clean and cut the fish into large pieces and cook with 1/2 cup water, salt, vinegar and turmeric until it is completely dry. Flake the boiled fish taking care to to take out all the bones and skin. Heat oil in a pan and season with mustard and curry leaves, Make a paste of onion and green chilies, add that paste and ginger paste and fry well. when the mixture has browned add the flaked fish, coconut. Fry stirring all the time till the mixture turns golden brown. Add chopped coriander and serve hot with rice.

Sweet Lassi


Ingredients

500 ml yoghurt

1/2 tsp salt

2 tbsp sugar

Crushed Ice

250 ml Water

Method

place all the ingredients in a blender including ice and blend until it is a bit frothy
